Big News in Holly Springs: We’re One Huge Step Closer to Opening Day! ☘️

If you’ve driven by Peterson Place lately or been keeping an eye on our website as we revamp it, you may already know what’s coming - Doherty’s Irish Pub & Restaurant is coming to Holly Springs this December, right at the corner of Sunset Lake Road and Stephenson Road.

And this past week?

A big one. 

Not the dramatic, “walls are going up” stage, we’re well past that but gosh was that a "load bearing" phase, lol. This was the week where the details started clicking into place, the fun part. The décor is finally coming together, the final touches are taking shape, and one of the highlights has been seeing our stained glass pieces going up. There’s something special about watching a space start to feel like us, and this week brought a lot of those moments. We also wrapped up a handful of important behind-the-scenes steps and even better, we’ve started welcoming our first members of the opening team. Getting to know these new faces and seeing how they’ll shape who we are in Holly Springs has been amazing, it’s the people who make a pub feel like home, after all.

Moments like this always make us think back on where we started. We definitely lost track of time the other day flipping through old photos, swapping stories, and even trying to track down some old décor replicas online (it’s amazing what a little nostalgia will do to your day!). When we opened the very first Doherty’s, we didn’t set out to become a “group” of pubs. It was just a cozy, fun little neighborhood spot where we did the things we wanted to see happen for the sake of having that experience with our friends and family and just kept going from there. We never expected at the time that one location would grow into three, soon to be four, but the communities that welcomed us turned each restaurant into a home. Every town has shaped us in its own way, and Holly Springs is about to leave its mark on the story, too.

We’ll be sharing more as December gets closer, but for now, everything is starting to click and the excitement is real!
