Irish Boxties at Doherty’s: A Taste of Tradition

Updated: 5 days ago

At Doherty’s, we love bringing a little piece of Ireland to every dish we serve, and our Irish boxties are no exception. These traditional potato pancakes have been a staple of Irish cooking for centuries, and we’ve put our own twist on them so you can experience the tradition in a way that’s uniquely Doherty’s.

A Little History

Boxty has been around in Ireland for generations dating back to at least the 18th century. Traditionally made from a combination of grated and mashed potatoes, boxties were a hearty, comforting dish designed to feed families using simple, local ingredients. The name itself is thought to come from the Irish phrase “bacstaí”, meaning a type of potato cake. Over the years, the humble boxty has evolved, and today it can be served in all sorts of creative ways, from simple pan-fried cakes to gourmet stuffed versions.

Our Boxty Sampler is the perfect introduction. It’s a trio of mini potato pancakes featuring our Killarney, Mullingar, and Donegal boxties. Ideal for sharing or for tasting them all yourself, this sampler is a favorite for both newcomers and longtime fans.

If you’re ready for a full meal, our full-sized boxties come with potato croquettes and haricots verts and let you choose from three savory fillings:

Mullingar

Mullingar - Tender brisket braised in Guinness with mushrooms and caramelized onions, topped with our house creamy horseradish sauce. A rich, savory classic.

Killarney

Killarney - Marinated chicken folded into a creamy béchamel sauce, topped with buttery Havarti and fresh basil. Smooth, indulgent, and comforting.

Donegal

Donegal - Sautéed mushrooms, caramelized red onions, and roasted red peppers drizzled with a light red wine reduction, topped with mild provolone and green onion. A flavorful, hearty vegetarian option.

Boxties aren’t just food, they’re a connection to Ireland’s culinary roots. Each one we serve at Doherty’s celebrates that history while giving it a modern, flavorful twist. From the sampler to the full-size versions, it’s a dish that’s perfect for sharing, savoring, and enjoying with a pint of Guinness.

So next time you visit Doherty’s, save room for a boxty...or three. Trust us, these potato pancakes are a small bite of Irish tradition you won’t want to miss.
